Beef Roll ups
Ingredients:
Round Steak
Cream Cheese with Chives
dijon mustard
Shredded cabbage/carrots/zucchini or whatever you like.
Instructions:
Round steak pound it until it is real thin. Cut in about 6 inch strips. Spread cream cheese with chives on the steak, spread on a little dijon mustard, place the vegetable filling that you like and roll it up. place in oiled pan with seem side down. Heat in the oven on 350 until the meat done to your liking

Low Carb Ham Wraps
This is one of my favorite recipes for that leftover Christmas ham
you will need
8 ounces cream cheese, at room temperature
4 ounces sour cream
1/4 cup minced sweet onion
1/4 cup shredded cabbage
1 teaspoon garlic powder
1 pound sliced ham, sliced thin enough to easily roll
Preparation
Blend together the cream cheese, sour cream, and garlic powder until smooth add in the onions and cabbage.
Spread over the ham slices, roll up and chill about 45 minutes. You can cut these either in half or make 1in thick slices for a nice appetizer.
You can also add or substitute the cabbage for celery thinly diced, cucumber or anything else you like to give it a nice little bit of texture.
I also like to take these and wrap them in lettuce leafs for a great low carb sandwich .

Low Carb Chicken Salad lettuce wrap
2 1/2 cups diced cooked chicken
4 bacon strips, cooked and crumbled
1 (8 ounce) can sliced water chestnuts, drained
1/2 cup thinly sliced celery
1/2 cup shedded carrot
mayonnaise just enough to hold it together a bit
1 tablespoon dried parsley flakes
2 teaspoons finely minced onion
1 teaspoon lemon juice
1/4 teaspoon ground ginger
1 dash Worcestershire sauce
salt and pepper to taste
mix let chill for a bit and put on lettuce leaves, roll or just wrap them as you want.

Most green vegetables are low carb (under 5g net carbohydrate per 100g)
exceptions to this are peas, beans, kale.
Carb count is net carbs, per 100g of raw item. This is not including fiber
Under 2g: lettuce, spinach, asparagus, endive
2g – 2.9g: arugula,cauliflower, green bell pepper, celery, radish, summer squash,eggplant, tomato, mushroom, cauliflower, zucchini.
3g – 3.9g: cucumber, green cabbage, white cabbage, red bell pepper, parsley, green onion tops.
4g – 4.9g: broccoli, turnip, yellow bell pepper, fennel, snow peas.
Medium And High Carb Vegetables List
Some of the medium carb vegetables, such as onion, can be included in a low carb diet in small quantities.
Medium carb vegetables (between 5g and 12g net carb per 100g) include onion, leek, green peas, kale, red cabbage, pumpkin, carrot, rutabaga, winter squashes,
High carb vegetables (over 12g net carb per 100g) include potato, corn, beans, lentils, parsnip.
Avocados And Olives
Olives and avocados are technically fruits, not vegetables. Unlike other fruits they are low carb foods and make great salad ingredients.
California (hass) avocados have just 1.8g net carbohydrate per 100g. Florida (smooth skinned) avocados have 2.2g. So both types are low carb.
Olives have around 3g net carb per 100g. However, be careful to check packaging when buying olives to make sure that there are no added sugars. Olives in salt water or oil with no added ingredients can be added to salads along with low carb vegetables.
